Korea Food Show 2023 (KFS 2023), a fair that looks into the future of the Korean food tech industry, took place took place at the aT Center in Yangjae-dong, Seoul, at from Nov. 15 to Nov. 17.
KFS 2023 was hosted by the Ministry of Agriculture, Food and Rural Affairs (MAFRA) and organized by Korea Agro-fisheries & Food Trade Corp. (aT). Korea Food Show 2023 was the 15th rendition.
The fair has been held every year since 2008 to share the latest trends of the Korean and foreign food industries and explore overseas markets.
KFS 2023 brought together 109 exhibitors, a three-fold jump from 37 exhibitors in 2022.
The fair showcased five shared growth models between agriculture and food tech sectors as well as the latest food tech technologies and products in seven sectors, such as next-generation food, innovation manufacturing, and outside eating food tech.

KFS 2023 separately set up the Rice Flour Pavilion to promote 50 kinds of products, including bread and cakes made with rice flour.
Six corporate exhibitors at the Next-Generation Food Pavilion promoted plant-derived alternative foods and cell culture foods for future generations in consideration of coping with climate change and grain security.
Meta Texture introduced ¡°Sweet Egg,¡± a plant-derived boiled egg. The product, made with vegetable ingredients, such as mung bean and pumpkin, resembles an ordinary egg in terms of taste and texture.
It realizes the taste of yolk with natural additives, and testing findings showed that the white of Sweet Egg matches 90 percent of that of a natural one.
Comparisons show that Sweet Egg¡¯s calories and saturated fat are 33.8 percent and 98.7 percent lower, respectively, but protein remains unchanged.
Sweet Egg is available in convenience stores, such as C&U, and it is used for making frozen gimbap (seaweed rice rolls) exports.
The Innovation Manufacturing Pavilion brought together 34 companies to promote the sustainability of the food tech industry by displaying the latest technologies, such as convenience food manufacturing, food smart manufacturing, food 3D printing, new utilization foods and eco-friendly packing technologies.

This year¡¯s coveted Order of Industrial Service Merit, Silver Tower went to President Her Chul-ho of Korea Ginseng Corp.
He has been credited with his contribution to achieving a feat of ranking 1st in the global ginseng mark for the 10th consecutive year and globalizing homemade red ginseng.
President Her was praised for his role in registering a powered red ginseng stick as a functional food in Japan.
