Genji, Millennium Seoul Hilton’s Japanese restaurant, is pleased to offer two dedicated omakase bars at its restaurant: one specializing in tempura (the first of its kind in a hotel restaurant in Korea) and the other in sushi and sashimi. The two omakase sections will open officially at the beginning of September.
Omakase means “I’ll leave it up to you” in Japanese, and connotes a special trust given to an honoured chef, who will decide for the diner what types of dishes to prepare for a spectacular multi-course meal. Utilizing the finest ingredients and showcasing the chef’s greatest skills and abilities, an omakase meal is a special experience that is likened to an artistic performance by the chef.
Driving the omakase experience is the new head chef of Genji, Goo Min Sool. An omakase specialist, Chef Goo has over 23 years of experience under his belt. He has been delighting the palates of diners at boutique restaurants in Seoul, and Millennium Seoul Hilton is excited to bring his know-how, innovation, and passion for Japanese fine-dining to Genji.
Genji will continue to offer a refined a la carte menu for guests preferring to choose menu items for themselves.
The word “Genji” is derived from Hikaru Genji, the main character of Murasaki Shikibu’s The Tale of Genji, a renowned classical novel from Japan’s Heian period. In Japan, Genji has now become a symbol of the best food, wine and gourmet experience. By evolving into an omakase restaurant, Genji is truly living up to Genji’s name.

덴푸라 오마카세 전용 카운터, 호텔업계 최초 개장!!!
정갈하고 담백한 정통 일식 요리를 선보이는 밀레니엄 서울힐튼 일식당 겐지가 ‘오마카세’ 전문 식당으로 탈바꿈을 시도한다. 덴푸라 전용 카운터와 스시 전용 카운터를 새롭게 단장, 오마카세에 방점을 둔 새로운 메뉴를 구성하여 9월 1일부터 고객에게 선보일 예정이다. 특히 새롭게 설치되는 ‘덴푸라 오마카세 전용 카운터’는 호텔업계 최초의 시도여서 귀추가 주목된다.
'오마카세(お任せ)'는 '맡김’, ‘일임’이라는 뜻의 일본어이다. 고객이 오마카세로 주문한다는 것은 셰프에 대한 전적인 신뢰를 표현하는 것이며, 셰프는 고객의 ‘일임(お任せ)’을 바탕으로 그날 준비된 최선의 식재료를 사용하여 사전에 정해진 메뉴가 아닌 오롯이 셰프의 직관(直觀)으로 최상의 요리를 고객에게 내어 놓는다.
‘겐지(源氏)’는 일본 헤이안 시대 최고의 고전소설로 꼽히는 ‘겐지모노가타리’의 주인공 ‘히카루 겐지’에서 유래되어 오늘날 ‘최고의 음식과 술 그리고 미식가’를 상징하는 단어로 자리매김했다. 오마카세 전문 식당으로 탈바꿈을 시도하는 겐지의 새로운 시도는 ‘오마카세’라는 최신 일식 트렌드를 반영한 방향성을 재설정함과 동시에 겐지의 네이밍에 최적으로 부합하는 시설과 음식을 선보이겠다는 고객과의 다짐인 것이다.
이를 위해 겐지는 오마카세 전문 ‘구민술(45)’ 셰프를 최근 영입하였다. 구민술 셰프는 23년 경력의 일식요리 전문 베테랑 셰프로서, 매일 새벽 산지 업계 관계자들과 소통하며 더 나은 식재료를 구하기 위해 고민하고, 이를 최고 수준의 요리로 창작하는 실력 있는 셰프로 알려져 있다. 구민술 셰프의 창의성이 돋보이는 스시와 고객과의 소통능력은 '오마카세(お任せ)'요리를 즐기는 고객의 기대를 충족시키기에 부족함이 없을 것이다.
